Candy Apples AFTER 48hrs Cleaning & Preparing Candy Apples for Dipping My preferred method is to allow my apples to sit out at room temperature for 24 to 48 hours after they have been washed and prepared. During this time, the apples go through a natural drying and curing process. As they sit, you may notice the apples begin to change slightly in appearance and develop small sticky spots or a sap-like substance on the surface. This is completely normal and is part of the process. In this video, I am showing apples that have been sitting for 48 hours. Once the apples have completed this resting period, take a damp towel and thoroughly wipe each apple to remove any stickiness, residue, or moisture from the surface. After wiping with the damp towel, immediately follow with a dry towel and dry the apple completely. After the apples are clean and dry, insert your apple sticks. Once the stick has been inserted, use a dry towel to wipe around the top of the apple where the stick enters. This step is important because it removes any juice or moisture that may have surfaced around the insertion point. You do not want any standing moisture near the stick, as it can affect the candy coating and increase the chances of bubbles or separation during dipping.
