Last week I got to head out to Wisconsin and spend some real time with the crew at @HallofFameFarms, and trips like this remind me that great beef is only part of the story. It’s the people behind it that make it special. This is Caroline. She’s one of those people doing a hundred things behind the scenes that most of you never get to see, and she’s an absolutely incredible human. Hardworking, positive, always helping the team, and now we can officially add grinding her own beef to the résumé. She jumped in, learned something new, and before long we had fresh Hall of Fame Wagyu burgers hitting the grill. No sauce. No condiments. Just salt, pepper, and incredible beef. That burger melted in our mouths. But honestly, the best part of this trip was getting to spend time together, hang out with the entire team, laugh, learn, cook, and get to know the people behind Hall of Fame Farms on a deeper level. Caroline, you’re a rockstar. Thank you for everything you do that people see and, even more importantly, everything you do when nobody is watching. A whole New York strip is $14.99/lb. Buy those same steaks already cut and you’re looking at $24.99/lb. That’s $10 a pound you can keep in your pocket just by doing a little work yourself. Jimmy Dean breakfast sausage has been around for a reason. It tastes good, it is familiar, and for a lot of us, it was part of breakfast growing up. But making breakfast sausage at home is surprisingly simple. Start with ground pork, then add a seasoning blend. You can purchase a premade breakfast sausage seasoning, or make your own. For 1 pound of ground pork: • 1 tsp kosher salt • 1 tsp rubbed sage • 1 tsp brown sugar • 1/2 tsp black pepper • 1/2 tsp dried thyme • 1/4 tsp garlic powder • 1/4 tsp onion powder • 1/4 tsp crushed red pepper, optional • Pinch of nutmeg, optional Mix thoroughly, refrigerate for a few hours or overnight, then form into patties and cook. That is the entire process. The advantage of making it yourself is control. You decide the quality of the pork, the level of sweetness, the amount of sage, and whether you want more heat or a more traditional profile. Use a prepared seasoning blend for convenience, or build your own from scratch. Simple ingredients. Familiar flavor. Made your way. #MEATDAD
