5 tips for the juiciest bird: 1. Cook to Temperature, Not Time — We cooked a turkey using its packet instructions, and found it was cooking for over two hours too long, and was overcooked by 23 °C 😭 2. Prep with a Wet Brine — Check out our previous post to see how to do this juice-inducing turkey prep 💦 3. Factor in Carryover Cooking — Remove your turkey from the oven at 67 °C; it will rise to a safe 74 °C as it rests 🌡️ 4. A Long Rest is Best — Once the temp starts dropping, it's time to carve. This can take 45-90 mins 🔪 5. Foil or No Foil? Light tenting with foil adds moisture, but no foil results in a crispier skin. Choose your fighter 🦃 What are your juicy turkey secrets? We cooked 3 turkeys to test time vs temperature. Turkey 1 – Packet instructions Cooked for 4 hours as recommended. Internal temperature: 97°C (23°C over the safe temperature of 74°C). Result: Dry, tough, overcooked turkey. Turkey 2 – Cooked to safe temperature Removed from the oven at 74°C. Cook time: 1h 20m (1h 25m less than the packet suggested). During resting, the temperature rose to 80°C. Result: Better, but still not as juicy as expected. Turkey 3 – Temperature + rest Removed from the oven at 67°C. Monitored during resting and it naturally rose to 74°C. Result: Juicy, tender, perfectly cooked turkey. Key takeaway: Always cook to temperature, not time. Do not rely on packet instructions. Pull turkey at 67°C — it will reach 74°C while resting #christmasturkey #christmasdinner #christmascooking #cookingtips
Temp vs time lamb — results in action 🔥 Lamb 1 – cooked to temp 🌡️ Pulled at 54° C 40 mins cooking time 7 °C increase during resting (61 °C peak temp) Carved after 14 mins Result: pink and juicy 💦 Lamb 2 — cooked to packet time ⏰ Pulled at 89 °C 80 mins cooking time 3 °C increase during resting (92 °C peak temp) Result: Tough and grey 🙅♂️ Verdict: Cook to temperature, not time, regardless of the finish you prefer. Packet timing is overcompensated and cannot guarantee the finish you want. Thermometer featured: RFX wireless (currently 20% off for Easter!) Tag us in your lamb cooks and show why everyone should cook to temperature over time 🙌
