Sugar-On-Snow! Maple syrup heated and poured over fresh snow (served w/pickles!) is a long-standing tradition in my family. The first snowstorm brings a celebration of sweetness. It may be simple, but some of the best things are, right? My grandmother & grandfather grew up tapping maple trees in Vermont and every Christmas they gave us the best maple syrup, maple “butter” and maple candy from the previous season’s harvest. My grandma would even save snow in the freezer for picnics in the summer, pouring the heated syrup over trays of snow so we could all twirl our forks in this cool golden treat. We always had “sugar” on snow with a plate of pickles to balance the sweetness; it definitely influenced the way I cook-salty/sweet w/something pickled on the side. Sugar on Snow is a tradition in many places across the Northeast, and is easily made with snow & maple syrup. Add a knob of butter of your choice, or leave it out. I prefer the flavor with the butter added but it will work either way. I used a candy thermometer in the video to show the approximate temperature you want to get your syrup to—234F or a bit less. The top of the syrup will begin to look smooth and soft, after being frothy and bubbly for several minutes.
