Here’s why it works: something magic happens when sweet potatoes roast in the oven. The edges caramelise, they go slightly chewy, and that natural sweetness plays off the heat and depth of the chilli in a way rice never could. Rice just carries the chilli. Sweet potato actually adds something to it. Then you build the plate — a generous spoon of chilli over those roasted sweet potatoes, fresh guacamole on top, a bit of crisp salad on the side, a dollop of sour cream and a handful of cheese to bring it all together.
