Ackee & Saltfish * (RECIPE IN CAPTION) (Jamaica's national dish) and you know I had to bring MomDukes out. Love you mom What You'll Need: Codfish (Gaspe) |YKYK Ackee Onion Tomato Scallion Thyme Red, green & yellow peppers Scotch bonnet pepper Pimento seed Green banana Ripe plantain Flour Salt Black Pepper What To Do: Take the skin off the codfish (optional, you can boil with skin on then clean it off). Boil the codfish, throw off the water. Put fresh water then boil a second time. Use that water to boil the green banana and dumplings. Put cooked codfish in a bowl and put cold water. Cut up the seasoning, put frying pan on the stove, fire should be on medium. Put oil in pot & add the cut up seasoning. Cover pot and simmer for about 10 minutes. Debone the codfish and break up in small pieces. Add to simmering pot. Cook for about 10 minutes. Add ackee and cook for an additional 10-15 minutes.
