Here's the ratio I use: 1/3 to 1/2 cup chia seeds + 2 1/2 to 3 cups water in a leak-proof jar. Shake it like you mean it, orstir with a fork). Wait 5 minutes, shake again so it doesn't clump or turn into a blob. Refrigerate. It keeps about a week and thickens into a loose gel you can spoon into anything. Where I use it: oatmeal, overnight oats, morning oatmeal, smoothies, yogurt bowls, cottage cheese, protein shakes, kefir, applesauce, pancake, homemade chia jam, salad dressing, sparkling water with lime. Why chia: about 10g fiber per ounce, and most of us eat roughly half the fiber we need. It's soluble fiber, so it slows digestion, blunts the blood sugar spike after a meal, and modestly helps LDL cholesterol.
