🍋 1978 Lemon Bars — You All Were Right! Cooking my way through vintage recipes, and we’re giving lemon bars another try! After my first attempt, several of you recommended using fresh lemons instead of bottled juice. Well, I listened, and WOW! These were even better than the first batch! A buttery, three-ingredient shortbread crust topped with a sweet-tart lemon filling. Simple, delicious, and absolutely worth making again! ⭐ 5/5 Stars — Definitely worth bringing back! 📖 Lemon Bars — 1978 Mission Circles Cookbook Bethesda Mennonite Church — Henderson, Nebraska Recipe by Mrs. Milton Huebert 🍋 INGREDIENTS Shortbread Crust * 2 cups flour * ½ cup powdered sugar * 1 cup butter Lemon Filling * 4 eggs, slightly beaten * 2 cups sugar * 6 Tbsp. fresh lemon juice * Grated rind of 1 lemon * 4 Tbsp. flour * 1 tsp. baking powder DIRECTIONS 1. It’s another week of cooking my way through vintage church cookbooks, and this week’s lineup is all about cozy, comforting, old-fashioned food! Here’s what’s coming out of my kitchen this week: 🍯 Butterscotch Brownies – Because every good week needs something sweet! 🥔 Potato Celery Soup – A warm, comforting bowl of homemade goodness. 🎃 Pumpkin Bread – Because it’s October, and pumpkin season is officially here! 🥩 Swiss Steaks in Foil – An old-fashioned dinner recipe that deserves a little attention. 🍲 Hamburger Soup – Nothing says fall quite like a big pot of homemade soup! Five vintage recipes, five taste tests, and my usual honest reviews! Some might be worth bringing back, and others might be better left in the cookbook. 😂 ❤️ Which recipe would you like to see first? 🍲 1975 Hamburger Soup — But Where’s the Broth?! 😂 I’m cooking my way through vintage recipes, and today’s comes from Cooking With Gospel Temple Cooks, a 1975 church cookbook from Moline, Illinois! This one had me scratching my head. The recipe called for plenty of vegetables, barley, and pasta, but absolutely NO broth or water! I added enough water to make it an actual soup, but unfortunately, the seasonings didn’t quite keep up. ⭐ My Rating: 3/5 — Needed more flavor! 📖 1975 Hamburger Soup Original recipe by Ree Jean Berger Ingredients: * 1½ lbs. ground beef (I used ground turkey) * 1 cup minced onion * 2 small cans tomato sauce * Salt and pepper, to taste * ½ tsp. chili powder * ½ cup chopped celery * ½ cup barley * 3 potatoes * Rice or macaroni (amount not specified) * Water, enough to cover ingredients by approximately ½ inch (my addition) * Garlic salt, to taste (my addition) Directions: 1. Brown ground meat with minced onion. 2. Add tomato sauce, celery, barley, potatoes, and seasonings. 3. Add rice or macaroni. I used ditalini pasta. 4. Add enough water to cover everything by approximately ½ inch. This was my addition, not part of the original recipe. 5. Cook over low heat for approximately 3 hours, adding water as needed until the barley, potatoes, and pasta are tender. My Verdict: Hearty and filling, but pretty bland. Next time I’d use beef broth instead of water and significantly increase the seasonings! 💬 What would YOU add to give this soup more flavor? ❤️ New vintage church cookbook recipes daily!
