🌽 It’s fun to try new ingredients especially a colorful one like purple corn flour. The first recipe I found was chocoyotes aka as Mexico’s dumplings. 🥟 I mixed the purple corn flour with 1 cup of water, 1 tsp salt, and tbsp oil. The soup I made for it has chipotle peppers 🌶️ 🫑 onions 🧅 carrots 🥕 tomatoes 🍅 veg bouillon, bay leaf and garbanzos al fin. I pressed the dough into little balls with a dent from my thumb to help them cook evenly and quickly in the soup. I have some prior experience making my own corn tortillas for years without a press. A plastic bag works but I used cooking paper to mash the dough into circles. Fry them on both sides and this part is a little tricker not to burn as they just get darker purple. They held up well with a hearty filling of mole tempeh veggies, rice and fresh avocado. 🥑 #corntortillas #veganfood #mexicanfood #chipotle #dumplings

I woke up and instantly knew what to do with the lentil beanfu I made the other day. I think the color reminded me of the gyros I used to make at my old job. Since I already had the beanfu ready this came together super quickly. Ingredients: Vegan meat substitute lentil beanfu or shredded tofu Soy sauce, olive oil Cumin, turmeric, paprika, chili pepper 🌶️ , salt and black pepper Hummus, lettuce 🥗 tomatoes 🍅 olives 🫒 red onions fresh cilantro 🌿 and lemon 🍋 Pita bread 🫓 and fries 🍟 Directions: Slice the beanfu into strips and mix with the soy sauce, olive oil and seasonings. Bake for 10 minutes and stir halfway through or bake till crispy. For the salad I mix the cut veggies and herbs with lemon juice. Near the end of the bake time put the pita bread in the oven to warm up. Serve with hummus, salad and fries and enjoyyyyy 💜 #lentils #veganfood #whatsfordinner #gyro #quickrecipes

Another quick way to use the beanfu is this tasty General Tso’s sauce with rice and veg 😋 I tried frying them with a cornstarch coating but I think it would be crisper/better without it and fried with less oil since they absorb a lot! Ingredients: Beanfu/tofu or other meat substitutes Veggies 🥕🥦 🧅 of choice Diced garlic 🧄 & ginger 🫚 A cup of veg broth a spoonful of corn starch a tsp rice vinegar 1 tbsp soy sauce a spoonful of brown sugar 1 tbsp ketchup a dash of chili flakes 🌶️ Rice 🌾 🍚 Directions: Slice and fry veggies, garlic and ginger in a little sesame oil. Mix the veg broth with cornstarch, vinegar, ketchup, brown sugar, soy sauce, and chilis. Fry the Beanfu till crispy and mix with the sauce and veggies. Serve over rice. The origin of this dish is so interesting to me since it was created by a Taiwanese chef especially for American tastes. There’s a lot of variations as well so I feel like I can keep trying the recipe till I get it just right. #generaltso #veganfood #quickrecipes #whatsfordinner #vegetarianfood
