Creamy fettuccine alfredo with a protein-packed twist thanks to NEW @Egglife Foods POWER PASTA

creamy tomato basil summer garden pasta 🍅🌿 the color and freshhhhhh taste of the sauce omg. perfect. WHAT YOU NEED: *i used about 50 cherry sized tomatoes (sorry for the weird measurement lol i plucked them from my garden obvi and didn't measure them!!) about 1/2 lb angel hair pasta 2 tbsp butter 2 tbsp olive oil 3 garlic cloves, finely grated cherry tomatoes heavy pinch of salt pinch of pepper 1/3 cup heavy whipping cream handful of freshly torn basil leaves 1/4 cup reserved pasta water freshly grated parmesan cheese WHAT TO DO: Bring a large pot of heavily salted water to a low boil. Since angel hair only needs to cook for a couple minutes, i don't add/cook the pasta until the sauce is ready. cook the garlic in butter and oil on low heat until fragrant, just about a minute or two. add the tomatoes, season with salt and pepper and cook for another minute or two, coating the tomatoes in the butter, oil and garlic while stirring around. turn the heat up to medium-high and immediately add the heavy cream. cover with a lid and let the tomatoes simmer and soften in the cream for 5-7 minutes. remove the lid and pop the tomatoes so their juices mix with the cream. you can use a blender here to smooth out the sauce from the tomato skins, or keep them in there for a bit of texture— up to you! stir in the basil, another 2 tbsp of cold butter and some parmesan cheese here. whisk and let the sauce bubble and thicken on low heat. cook the angel hair pasta now. i like to severely undercook this pasta shape when adding it to a creamy sauce. because it's soooo thin, it easily soaks up whatever sauce you add it to, and therefore easily overcooks and becomes mushy. this part is key if you use angel hair!!!! once the angel hair is soft, add the pasta cooking water and the angel hair into the tomato sauce and mix. plate the pasta right away and top with more parm, fresh basil, and some good extra virgin olive oil. enjoy!!!!! #pasta #angelhair #comfortfood #garden #tomatosauce
