It's World Vegetarian Day, and we've added our own twist on a tried-and-true favorite: Buffalo Cauliflower “Wings." When cooked properly, cauliflower can take on a range of different textures: crispy, meaty, tender, and even creamy. When air-fried properly, you can transform this bland brassica into crunchy, delectable nuggets. The trick is to remove as much excess water as possible by dehydrating the florets before cooking to get that satisfying crunch. The whole appeal of Japanese shio pan is the contrast: a shattering crust giving way to a pillowy, tender crumb. Trouble is, physics is working against it. After 30 minutes of cooling, water migrates from the interior to the exterior, hydrating the crust and leaving it tough and rubbery. So of course, we engineered around it to nail that contrast. Start with the crumb: a tangzhong, a pre-gelatinized starch paste that binds more water than dry flour can, for a fluffier, softer, lighter bread. Then the crust: we embed a frozen butter block inside each roll. As it bakes, the butter melts and pools, effectively frying the bottom. And we brush on a rice starch glaze that forms a dry, dense film, slowing water absorption at the crust so it stays glassy and crispy long after it would've gone soft. The best part?
