Dry Aged Cheshire Pork Chops paired with some spicy collards makes for a hell of a meal! Marinated the pork chops in my @VacMaster VP195 using a mixture of avocado oil, Dijon mustard, soy sauce, honey, 2 cloves minced garlic, juice of 1 lemon, crushed black pepper and dried thyme Then reverse seared them in the @Kamado Joe over some @fogocharcoal and Cherry wood chunks at around 250° for 30 minutes before dropping the grates and finishing them off with a sear. Pulled them off at 145° internal and let them rest for 5 minutes before slicing up! Spicy collards recipe: * 2 pounds collard greens - rinsed * 5 slices bacon - diced * 3/4 cup chicken broth * 3 tablespoons ACV * 1 tablespoon dark brown sugar * 1 teaspoon red pepper flakes * 1/2 teaspoon Texas Pete hot sauce * salt and pepper (to taste) - cut the ribs out of collards after rinsing - roll them up and cut into 1/2 inch strips - cook your bacon in a large pot or Dutch oven over medium heat - remove bacon (leave some grease) - Add broth, vinegar, sugar, red pepper flakes, and Texas Pete pot. Stir to combine - add the collards, turn and stir frequently until they get a little smaller - put lid on Dutch oven, reduce heat to low and let cook for an hour (30-40 minutes if using less than 2 Ibs of collards) - before serving sprinkle your diced bacon on top! #cooking #fyp #recipesoftiktok #BBQ #NorthCarolina
